Meringue bites are an easy to make treat that are perfect for any occasion. They only require a few ingredients but you can easily flavour them with just a few extra add-ins. Here I've made basic vanilla meringues but I also love rosewater and lemon flavoured meringues. One crucial step to making sure your meringues whip correctly is to thoroughly clean your bowl and whisk attachment, I recommend rubbing the inside of the bowl with vinegar after washing and drying. And also, make sure that the yolk separates from the white completely and wholly. If that yolk breaks in the white then use that to make scrambled eggs or a cake instead. Even the smallest, undetectable traces of fat can prevent the whites from forming peaks.
Ingredients
4 egg whites
1/2 teaspoon cream of tartar
1 teaspoon vanilla
1 cup caster sugar/superfine sugar
Method
Preheat oven to 210°F/100°C. Line a large baking sheet with baking paper.
In the bowl of a stand mixer, add the egg white, cream of tartar, and vanilla. Whisk on medium speed until soft peaks are formed. Add the sugar a little at a time, whisking for 20 seconds between each addition. Once all the sugar is added continue to whisk for around 5 minutes.
Spoon into a pastry bag with your choice of tip. Pipe onto the baking sheet into your desired shape.
Bake for 1 hour. Turn off the oven and leave the bites in the oven undisturbed. Do not open the oven for 40 minutes.
Remove, cool and enjoy!
