If you have ever wanted that sweet, nutty baklava flavor but don't really want to have all that pastry and butter then try this recipe. It is a quick, and healthier way to get that indulgent taste. Whether you enjoy granola as a topping for yogurt or smoothie bowls, or as a quick snack, it is a satisfying treat sure to please. Granola, typically made from oats, nuts and dried fruit, is a healthy and delicious snack that can be customised to suit individual tastes. Here I've used almond, walnut and pistachio for the nut mix to give it a delicious baklava flavour. If you add dried fruit it should be added after baking. If it is cooked with the rest of the granola the dried fruit will end up like little stones in your mix. This granola can be stored for several weeks in an air tight container.
Ingredients
3 cups rolled oats
1/3 cup chopped pistachios
1/3 cup chopped walnuts
1/3 cup chopped almonds
1/2 cup seeds (any larger sized seeds should be chopped)
1/4 cup brown sugar
1/4 cup honey
1/4 oil (if using coconut oil melt before mixing)
1 teaspoon cinnamon
1 teaspoon orange blossom water
Optional - 1/2 cup dried fruit of your choice.
Method
Preheat oven to 120°c/250°f
In a large bowl mix together the oats, nuts, seeds, sugar and cinnamon.
If using coconut oil, melt then mix remaining ingredients into the oil. Add wet mix to the dry oat mix.
Spread the mixture on a large baking sheet, pressing down lightly with a spatula. Use a large enough baking sheet or cookie pan that the mix isn't piled up. This will take longer to cook and might steam instead of crisp.
Bake for 1- 1 1/2 hours, mixing every 15-20 minutes. Remove from the oven when the granola is nice and brown.
Do not mix when removed from the oven. Let it fully cool in the baking tray undisturbed. This will help the granola crisp up and form little clumps.
If using dried fruit, this is when to add it. Once fully cooled mix in the fruit and store in an airtight container.
